Natural Preservative Blend from Roselle, Moringa, and Cinnamon Oil Keeps Chicken Sausages Fresh Longer

Researchers have unveiled a promising natural preservative blend that could revolutionize processed meat preservation.
A study published in Discover Food (2025) by Das et al. explored how combining roselle and moringa flower powders with cinnamon essential oil—termed “Combination B”—can replace synthetic preservatives like sodium nitrite in chicken sausages.

The team formulated five sausage batches, including untreated control samples and those treated with varying levels of the natural blend. The T3B formulation (1% Combination B, 0 ppm nitrite) showed the best results, maintaining superior cooking yield (98.46%), lower spoilage markers, and strong structural integrity over a 20-day storage period at 4 °C.

Using FTIR spectroscopy, the researchers identified 31 active functional groups contributing to the blend’s antioxidant and antimicrobial potency. The ABTS and FRAP assays confirmed strong radical scavenging and ferric ion reducing capacities.

Furthermore, color analyses showed more appealing redness and less fading during storage, while microscopic (SEM and histology) images revealed intact muscle fiber structures in treated sausages, unlike in controls where degradation occurred.

Overall, “Combination B” demonstrates dual benefits—preserving food quality and addressing health concerns linked with nitrites. The authors highlight its potential as a safe, sustainable, and consumer-friendly natural preservative for meat industries catering to health-conscious consumers.
